Cheesecake with plum jam

Ingredients

1 packet Biscuits petit-beur

3-4 tbsp. Butter

1 vanilla

1 kg Orange zest

2 tbsp. Sugar

250gr. Sour cream

250gr. Mascarpone cheese

1 shot of liqueur or brandy

Plum jam (homemade or commercial)

 

Method

STEP 1
In a blender, grind the cookies coarsely.

STEP 2
Heat the butter (not to burn) and add it to the grated cookies.

STEP 3
Mix well and add a little of the liqueur or brandy.

STEP 4
Stir to form a uniform base and spread them on pyrex.

STEP 5
Put in a preheated oven at 180 degrees and bake for about 10 minutes.

STEP 6
Remove from the oven and leave to cool well.

STEP 7
Beat the cream in a bowl, with the sugar, vanilla, the zest to become a whipped cream, add the mascarpone cheese or other cream cheese, the liqueur or the brandy and continue beating until the ingredients are homogeneous and become a firm cream. .

STEP 8
Once the base with the cookies has cooled, spread the cream on the base with a spatula evenly and spread the plum jam or some other jam of your choice on top.

STEP 9
Put the dessert in the fridge for about 4 hours and it is ready to enjoy.
